Ingredients
2 cups rice flour
1 cup potato starch (or cornstarch)
1 tablespoon dry yeast
1 teaspoon salt
1 tablespoon sugar (optional)
1/4 cup oil (of your choice)
2 cups warm water
Instructions
Prepare the Dough:
In a large bowl, mix the rice flour, potato starch, yeast, salt and sugar.
In another bowl, mix the oil and warm water.
Pour the liquid mixture into the dry mixture and stir well until smooth. The dough will be more liquid than a conventional bread dough.
Shaping and Rising:
Grease a loaf pan with a little oil.
Transfer the dough to the pan, smoothing the surface.
Cover with a clean cloth and let rise in a warm place for about 30-60 minutes, or until the dough has risen slightly.
Bake:
Preheat oven to 350°F (180°C).
Bake the bread for about 30-35 minutes, or until the crust is golden brown and when you tap the bottom of the bread it sounds hollow.
Cool:
Remove from the oven and let cool in the pan for about 10 minutes. Then transfer to a wire rack to cool completely before slicing.
Servings:
Makes about 10-12 slices.

Rising: 30-60 minutes
Cooking: 30-35 minutes
Total: Approximately 1 hour and 30 minutes
Tips:
You can add herbs or spices to the dough for added flavor.
Serving with pâtés or jams is a great option!
