Grilled Chicken with Quinoa and Salad

Ingredients:
1 cup quinoa
2 chicken breasts (approximately 8 ounces each)
1 tablespoon olive oil
Salt and pepper to taste
2 cups fresh spinach
1/2 cup cherry tomatoes, halved
1/4 cup sliced ​​red onion
Juice of 1 lemon
1/4 cup feta cheese (optional)


Instructions:
Cook the quinoa: Rinse the quinoa under running water. In a saucepan, add the quinoa and 2 cups of water. Bring to a boil, reduce heat, cover and simmer for about 15 minutes or until the water is absorbed. Set aside.

Prepare the chicken: Season the chicken breasts with olive oil, salt and pepper. Grill in a preheated skillet over medium heat for about 6-7 minutes per side or until cooked through. Remove from heat and let cool slightly before slicing.

Assemble the salad: In a large bowl, combine the cooked quinoa, spinach, cherry tomatoes, red onion and sliced ​​chicken. Drizzle with lemon juice and toss to coat.
