Ingredients
For the cake:
2 cups all-purpose flour
1 cup sugar
1/2 cup butter (room temperature)
1/2 cup vegetable oil
1 cup buttermilk (milk with 1 tablespoon vinegar or lemon juice, let sit for 5 minutes)
3 eggs
2 teaspoons vanilla extract
1 teaspoon white vinegar
1 teaspoon baking soda
2 tablespoons cocoa powder
Purple food coloring gel or liquid (enough to get desired color)
For the filling and frosting (Cream Cheese Glaze):
200g cream cheese
1/2 cup peanut butter or regular butter (room temperature)
2 cups confectioners’ sugar
1 teaspoon vanilla extract
Instructions
Prepare the oven and pan: Preheat the oven to 350°F (180°C). Butter and flour two 8-inch round cake pans.
Crust:
In a separate bowl, sift together the flour, cocoa powder, and baking soda.
In another bowl, beat together the butter, sugar, oil, and vanilla extract until fluffy.
Add the eggs, one at a time, beating well after each addition.
Add the buttermilk and purple food coloring until combined.
Gradually add the dry ingredients to the wet mixture, beginning and ending with the dry ingredients, mixing gently.
Add the white vinegar.
Bake:
Divide the batter evenly between the pans.
Bake for about 25 to 30 minutes, or until a toothpick inserted in the center comes out clean.
Allow the cake to cool completely before assembling.
Filler and frosting:
Beat the cream cheese, peanut butter, and vanilla extract until smooth.
Gradually add the confectioners’ sugar, beating until light and stiff.
Assembly:
Place one cake layer, spread some frosting on top, top with a second cake layer, and frost the top and sides with the remaining frosting.
Tips:
You can decorate or fill with your favorite fruits, it looks incredible.
