Ingredients
For the Meatballs:
1 lb (450 g) ground chicken
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1/4 cup chopped parsley
1 clove garlic, minced
1 egg

1 cup heavy cream
2 tablespoons Dijon mustard
1 tablespoon whole grain mustard
1 tablespoon olive oil
1/2 onion, finely chopped

Instructions
Prepare the Meatballs:
In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, parsley, minced garlic, egg, salt, and pepper. Mix until well combined.
Shape the mixture into meatballs, about 1 inch in diameter.
Cook the Meatballs:
In a large skillet, heat 1 tablespoon of olive oil over medium heat.
Add the meatballs to the skillet and cook for about 6-8 minutes, turning occasionally, until they are browned and cooked through. Remove from skillet and set aside.
Make the Creamy Mustard Sauce:
In the same skillet, add 1 tablespoon of olive oil and heat over medium heat. Add the chopped onion and sauté until translucent.
Stir in the heavy cream, Dijon mustard, whole grain mustard, salt, and pepper. Bring to a gentle simmer, stirring occasionally.
Return the meatballs to the skillet and coat them with the sauce. Cook for an additional 2-3 minutes until heated through.
Serve:
Garnish with fresh parsley if desired and serve warm, over pasta, rice, or with a side of vegetables.
