Ingredients:
For the Cake:
1 ½ cups all-purpose flour
1 ½ teaspoons baking powder
½ teaspoon salt
½ cup unsalted butter, softened

For the Berry Layer:
2 cups mixed berries (strawberries, blueberries, raspberries)

1 cup whole milk
2 large egg yolks
¼ cup sugar
2 tablespoons cornstarch
1 teaspoon vanilla extract
For the Whipped Cream:
1 cup heavy whipping cream
2 tablespoons powdered sugar
1 teaspoon vanilla extract
Instructions:
Prepare the Cake:
Preheat your oven to 350°F (175°C).
In a bowl, whisk together flour, baking powder, and salt.
In a separate bowl, cream the butter and sugar until light and fluffy. Add eggs one at a time, followed by vanilla.
Gradually mix in the dry ingredients, alternating with milk, until smooth.
Pour the batter into a greased 9-inch round cake pan and bake for 25-30 minutes, or until a toothpick comes out clean.
Allow the cake to cool completely, then cut it into cubes.
Prepare the Berry Layer:
If using strawberries, slice them. Combine all mixed berries in a bowl and sprinkle with sugar, if desired. Let them sit for 15 minutes to release their juices.
Prepare the Custard:
In a saucepan, heat the milk over medium heat until just under boiling. In a bowl, whisk together egg yolks, sugar, and cornstarch.
Gradually whisk the hot milk into the egg mixture to temper the eggs. Then pour it back into the saucepan.
Cook over medium heat, stirring constantly until the custard thickens. Remove from heat and stir in vanilla. Let it cool, then refrigerate it until needed.
Prepare the Whipped Cream:
In a mixing bowl, beat the heavy whipping cream with powdered sugar and vanilla until stiff peaks form.
Assemble the Trifle:
In a large trifle dish or individual glasses, layer the ingredients starting with a layer of cake cubes, followed by berries, custard, and whipped cream. Repeat layers until all ingredients are used, finishing with whipped cream on top.
Optional: Garnish with whole berries or mint leaves.
Chill and Serve:
Refrigerate the trifle for at least 2 hours before serving to allow the flavors to meld.
