In a large wok or skillet, heat the olive oil over medium-high heat. 2. Add the garlic and ginger and stir fry for about 30 seconds or until fragrant. 3. Add the bell pepper, onion, carrots, and zucchini to the wok or skillet. Continue to stir fry for about 5-7 minutes, or until the vegetables are tender-crisp. 4. Add the soy sauce, sesame oil, salt, and pepper to the vegetables. Stir well to combine. 5. Continue to cook for another 2-3 minutes, or until the vegetables are coated in the sauce and heated through. 6. If desired, sprinkle the vegetable stir fry with sesame seeds and green onions before serving. 7. Enjoy your vegetable stir fry hot, ideally with a side of steamed rice or noodles. Note: You can also add other vegetables like broccoli, snap peas, or mushrooms, or even tofu or chicken for a protein boost.
