2 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp dried thyme or rosemary
Fresh rosemary for garnish
Lemons (for stuffing and garnish)
Assorted vegetables (potatoes, carrots, onions, cherry tomatoes)
Garlic cloves (4-5)
Instructions:
Preheat your oven to 425°F (220°C).
In a small bowl, mix olive oil, salt, pepper, paprika, garlic powder, onion powder, and thyme.
Rub the mixture all over the chicken, making sure to coat evenly.
Stuff the cavity with lemon halves and a few sprigs of rosemary.
Place the chicken on a roasting pan, surrounded by chopped vegetables and garlic cloves.
Roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C) and the juices run clear.
Let rest for 10 minutes before carving.
Serve garnished with fresh rosemary and lemon slices.
