Rainbow Cake

Ingredients:
For the Cake:
2 ¾ cups (345 g) all-purpose flour
2 ½ tsp baking powder
½ tsp salt
1 cup (225 g) unsalted butter, softened
2 cups (400 g) granulated sugar
4 large eggs
1 tsp vanilla extract
1 cup (240 ml) whole milk
Food coloring (red, orange, yellow, green, blue, purple)

For the Frosting:
1 cup (225 g) unsalted butter, softened
4 cups (480 g) powdered sugar
¼ cup (60 ml) heavy cream
2 tsp vanilla extract
Food coloring for decoration (optional)

Instructions:

Preheat the Oven:
Preheat your oven to 350°F (175°C).
Prepare the cake batter:
In a bowl, whisk together the flour, baking powder, and salt.
In a separate large bowl, beat the softened butter and granulated sugar until light and fluffy.
Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Mix until smooth.

Color the Batter:
Divide the batter evenly into six bowls.
Add different food coloring to each bowl to create your rainbow colors (red, orange, yellow, green, blue, purple).

Bake the Cake:
Grease and flour six 8-inch round cake pans.
Pour each colored batter into its respective pan and smooth the tops.
Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Cool the Cakes:
Once baked, allow the cakes to cool in the pans for 10 minutes, then remove them from the pans and let them cool completely on a wire rack.

Prepare the Frosting:
In a large mixing bowl, beat the softened butter until creamy.
Gradually add the powdered sugar, mixing well.
Add the heavy cream and vanilla extract, beating until fluffy.

Assemble the Cake:
Once the cakes are cool, stack them in rainbow order, spreading a layer of frosting between each layer.
Cover the entire cake with a thin layer of frosting to seal in crumbs, then frost with a final layer as desired.

Decorate:
Optionally, use additional food coloring to create decorations on top of the cake.
