Ingredients:
1 cup (240 ml) fresh orange juice
Zest of 2 oranges
1/2 cup (120 ml) vegetable oil
2 cups (250 g) granulated sugar
3 large eggs
2 cups (250 g) all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon (optional)
Instructions:
Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
Mix Wet Ingredients: In a large bowl, whisk together the orange juice, orange zest, vegetable oil, sugar, and eggs until well combined.
Combine Dry :Ingredients: In a separate bowl, sift together the flour, baking powder, salt, and if using, cinnamon.
Combine Mixtures: Gradually add the dry mixture to the wet mixture, stirring until just combined. Do not overmix.
Bake: Pour the batter into the prepared cake pan and smooth the top. Bake in the preheated oven for about 30-35 minutes, or until a toothpick inserted into the center comes out clean.
Cool: Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Orange Cream Cheese Frosting Tip:
200g cream cheese
100g butter (room temperature)
300g confectioners' sugar
Juice and zest of 1 orange
Instructions
Mix the cream cheese and butter: In a bowl, beat the cream cheese and butter until smooth and creamy.
Add the sugar: Gradually add the confectioners' sugar and continue beating until well incorporated.
Add the orange: Add the orange juice and zest and mix until well combined.
Ice the cake: Spread the frosting over the cooled orange cake, decorating as desired.
Serve: Slice and enjoy the cake as is, or dust with powdered sugar for a decorative touch!
