Egg Salad

Ingredients: – 6 hard-boiled eggs – 1/4 cup mayonnaise – 1 teaspoon mustard – 1/4 cup finely chopped celery – 2 tablespoons finely chopped onion – Salt and pepper to taste – Paprika for garnish (optional) Instructions: 1. Start by hard boiling the eggs. Place the eggs in a saucepan and cover with cold water. Bring the water to a boil over medium heat. Once boiling, remove from heat and let the eggs sit in the hot water for about 10-12 minutes. 2. Drain the water and rinse the eggs under cold water. Peel the eggs and chop them into small pieces. 3. In a bowl, combine the chopped eggs, mayonnaise, mustard, celery, and onion. Stir until well mixed. 4. Season with salt and pepper to taste. You can add more mayonnaise or mustard if desired. 5. Optionally, sprinkle with paprika for a bit of color and added flavor. 6. Cover and refrigerate the egg salad for at least an hour to let the flavors meld together. 7. Serve chilled. This egg salad can be served on a bed of lettuce, as a sandwich filling, or with crackers. Enjoy your homemade egg salad! Note: You can add other ingredients to your egg salad if you wish. Some popular additions include dill, chives, pickles, or even bacon. Just be sure to chop any additions into small pieces to ensure they blend well with the rest of the salad.
