Here is a basic recipe: Ingredients: – 1 whole chicken – 2 carrots, chopped – 2 celery stalks, chopped – 1 large onion, chopped – Salt to taste – Pepper to taste – 2 tablespoons of olive oil – 6 cups of water – Optional: parsley, dill or bay leaves for additional flavor Instructions: 1. In a large pot, heat the olive oil over medium heat. Add the chopped carrots, celery and onion to the pot and sauté until the vegetables are softened. 2. Add the whole chicken to the pot along with the water. Bring the water to a boil. 3. Reduce the heat to low and let it simmer. Skim off any foam or fat that floats to the top. 4. After about an hour, remove the chicken from the pot and let it cool. Once it’s cool enough to handle, remove the skin and bones and shred the meat. 5. Return the shredded chicken to the pot and season with salt, pepper, and any additional herbs you like. 6. Allow soup to simmer for an additional 1-2 hours. 7. Serve hot.
