Ingredients: - 3 tablespoons vegetable oil - 1 large onion, sliced - 1 bell pepper, sliced - 3 boneless, skinless chicken breasts, sliced into thin strips - 1 packet of fajita seasoning mix - 1/4 cup water - 8 flour tortillas, warmed - Toppings: shredded lettuce, diced tomatoes, shredded cheese, sour cream, guacamole Instructions: 1. In a large skillet, heat 2 tablespoons of the vegetable oil over medium-high heat. 2. Add the onion and bell pepper, and cook until they are softened and beginning to brown, about 5 minutes. Remove them from the skillet and set aside. 3. In the same skillet, heat the remaining tablespoon of oil. Add the chicken strips and cook until they are no longer pink in the center, about 5-7 minutes. 4. Sprinkle the fajita seasoning over the cooked chicken. Add the water, and stir until the seasoning is evenly distributed and the chicken is coated. 5. Return the cooked onion and bell pepper to the skillet and stir to combine with the chicken. 6. Cook for an additional 2-3 minutes, until everything is heated through. 7. Warm the flour tortillas in the oven or on the stove. Fill each tortilla with the chicken and vegetable mixture. 8. Top with your desired toppings such as shredded lettuce, diced tomatoes, shredded cheese, sour cream, and guacamole. 9. Fold the tortillas over the filling and serve hot.
