- Mix dry ingredients:
In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt until well combined. - Mix wet ingredients:
In another bowl, whisk together buttermilk, egg, melted butter, and vanilla extract (if using) until smooth. - Mix mixtures:
Pour wet ingredients into dry ingredients and gently stir until well combined. The batter may be a little lumpy; do not overmix. - Preheat the griddle:
Heat a nonstick skillet or griddle over medium heat. Add a small amount of butter to the surface and let it melt, coating the pan. - Cook the pancakes:
Pour about 1/4 cup of batter into the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook the other side until golden brown, about 1-2 minutes more. - Serve:
