Ingredients: For the Crust: - 2 1/2 cups all-purpose flour - 1 teaspoon salt - 1 teaspoon sugar - 1 cup unsalted butter, cold and cut into small pieces - 1/4 to 1/2 cup ice water For the Filling: - 2 pounds apples (about 4-5 large apples), peeled, cored, and sliced - 3/4 cup sugar - 2 tablespoons all-purpose flour - 1 tablespoon lemon juice - 1 teaspoon ground cinnamon - 1/4 teaspoon ground nutmeg - 1/4 teaspoon salt - 2 tablespoons unsalted butter, cut into small pieces For the Topping: - 1 egg, lightly beaten - 1 tablespoon sugar Instructions: 1. Start by making the crust. In a food processor, combine flour, salt, and sugar. Add butter and process until the mixture resembles coarse meal, about 15 seconds. 2. With the machine running, slowly pour in enough ice water until the dough holds together without being wet or sticky. 3. Divide the dough into two equal pieces, wrap each in plastic, and refrigerate for at least 1 hour. 4. Preheat the oven to 375°F (190°C). 5. On a lightly floured surface, roll out one piece of dough to fit a 9-inch pie plate. Transfer the dough to the pie plate and trim the edges, leaving a 1-inch overhang. 6. For the filling, in a large bowl, combine apples, sugar, flour, lemon juice, cinnamon, nutmeg, and salt. Toss until everything is well combined. 7. Pour the apple mixture into the pie crust and dot with butter. 8. Roll out the second piece of dough into a 12-inch round. Lay it over the filling and trim the edges, leaving a 1-inch overhang. Fold the overhang under the bottom crust, pressing the edge to seal it, and crimp the edge as desired. 9. Cut a few slits in the top crust to allow steam to escape. 10. For the topping, brush the crust with the beaten egg and sprinkle with sugar. 11. Bake the pie for 50 to 60 minutes, or until the crust is golden and the filling is bubbling. 12.
