Blackberry Pie Recipe

Blackberry pie is a classic dessert with roots in American and European culinary traditions, especially popular during the summer when blackberries are in season.

Ingredients
2 1/2 cups fresh blackberries (or frozen, thawed)
1 cup granulated sugar
2 tablespoons cornstarch
1 tablespoon lemon juice
1 teaspoon lemon zest
1/4 teaspoon salt
1 package (about 1 pound) pre-made pie crusts (or homemade crust)
1 egg (beaten, for egg wash)
Sugar for sprinkling (optional)

Instructions
Method:
Preheat the oven to 425°F (220°C).

In a bowl, combine the blackberries, sugar, cornstarch, lemon juice, lemon zest, and salt. Toss gently to coat all the berries evenly. Set aside.
Roll out one pie crust into a 9-inch pie dish. Trim the edges.
Pour the blackberry filling into the prepared pie crust.
Cover with the second pie crust or create a lattice top if desired. Trim excess crust and pinch the edges to seal.
Brush the top crust with the beaten egg for a shiny finish. Sprinkle sugar on top if desired.
Cut small slits in the top crust to allow steam to escape.
Bake in the preheated oven for about 45-55 minutes, or until the crust is golden brown and the filling is bubbling.
Cool the pie for at least 2 hours before slicing to allow the filling to set.
