1 teaspoon baking powder
½ teaspoon salt
For the Mirror Glaze:
1 ½ cups white chocolate, chopped
1 cup sweetened condensed milk
1 ½ cups water
2 ½ teaspoons gelatin powder
½ cup cold water (for gelatin)
2 cups granulated sugar
1 cup glucose syrup (or corn syrup)
½ teaspoon purple food coloring (gel preferred for vibrant color)
For Decoration:
Fresh berries (blackberries, blueberries, raspberries)
Macarons (pink or purple)
Green leaves (optional)
White edible pearls
Instructions
Prepare the Cake:
Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
In a mixing bowl, cream together butter and sugar until light and fluffy.
Add eggs one at a time, beating well after each addition.
Mix in vanilla extract.
In another bowl, whisk together flour, baking powder, and salt.
Gradually add dry ingredients to the wet mixture, alternating with milk, beginning and ending with flour.
Divide batter evenly between the pans and smooth the tops.
Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
Allow cakes to cool completely.
Prepare the Mirror Glaze:
Bloom the gelatin: sprinkle gelatin over ½ cup cold water and let it sit for 5 minutes.
In a saucepan, combine water, sugar, and glucose syrup. Bring to a boil over medium heat, stirring continuously.
Remove from heat and add the chopped white chocolate, stirring until smooth.
Add the bloomed gelatin and stir until fully dissolved.
Add purple food coloring until you achieve the desired shade.
Strain the glaze through a fine sieve into a bowl to remove any lumps.
Let it cool to around 90°F (32°C) before pouring.
Assemble and Decorate:
Level the cooled cakes and stack with a layer of frosting or ganache if desired.
Chill the assembled cake to firm it up.
Place the cake on a wire rack over a tray.
Pour the slightly cooled mirror glaze over the cake, covering it evenly.
Decorate immediately with fresh berries, macarons, and edible pearls.
Let the glaze set before serving.
